Nana’s buttermilk pancakes

Ingredients:

  • 1/2 cup white flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 tablespoon canola oil
  • 3/4-1 cup buttermilk

Directions:

Mix the dry ingredients together in a bowl.  Beat the egg into the buttermilk.  Pour over the dry ingredients, whisking until smooth. Whisk in the canola oil. Melt butter in a hot non-stick pan or griddle.  Cook pancakes until golden brown, turning when the bubbles do not fill in when they pop. Serve with maple syrup.

Variations:

Try adding raisin, apples and walnuts, blueberries, or chocolate chips.
